Some days, I get home and don’t feel like standing anymore. What to do for food?? Take-out? Heck no. Instead, make the easiest guacamole ever… actually, it’s not guac, it’s an avocado, salt, and dried minced onions. If you’re feeling ambitious, you can mash the avocado with a fork or add cayenne or other capsaicin-containing products (edible ones, that is, not arthritis creams). Enjoy with a spoon, tortilla chips (which, regardless of labelling, are whole grains, that grain being corn), or my favorite, popped potato chips.
If you share, maybe your roommate will make you a margarita in return I don’t share.
After all, one avocado has only about 250 calories, 18 grams of good fats, 30% folate (important for women of child-bearing capability), and 20% DV of potassium (which most Americans are short on), Vitamin C, E, and 4 B vitamins.
