Tiny Adventures, Part 3: Chicken Pitas with Charred Veggies and Tzatziki

This recipe was a fun one- I basically took all the weird spices I had collected over the past few weeks and tried to figure out what new thing I could make with them.  I had just eaten a falafel wrap from a local restaurant, so I began perusing for a Middle-Eastern inspired meal that actually contains meat (to make my boyfriend happy).  I settled on chicken pitas because I already had all the ingredients (except the pitas- whole wheat of course!) and I could stuff a bunch of veggies in the sandwich without anyone noticing.

The first step is to make the sauce/marinade.  There are plenty of recipes out there, but I just went with my gut and my palate to make something delicious:

Combine 1/2 c plain yogurt, a splash of olive oil, and a squeeze of lemon juice in a bowl.  Add fresh parsley, oregano, cumin, turmeric, salt, pepper, and whatever other Mediterranean/Middle Eastern spices you like until the sauce tastes good.

Slice two chicken breasts into thin tenders and place in a Ziploc bag.  Add a few tablespoons of the sauce and squish to combine.  Leave to marinate while you prepare the rest of the meal.  If you’d like, add some shredded cucumber to the remainder of the sauce to make it more tzatziki-like.

Chop up a red onion and some bell peppers and saute with oregano, parsley, and salt until charred and softened.  I did this in two batches to avoid steaming the veggies.
  

If you’d like, chop up some lettuce, kalamata olives, or tomatoes for topping:

Place a few pitas on a plate and cover with a slightly dampened paper towel.  Microwave for 10-20 seconds until warm and soft.

When the vegetables are cooked, removed them to a plate and sear the chicken over high, high, high heat until cooked through and seared on the outside:

Stuff everything into a pita, top with more sauce, and enjoy!  This is insanely healthy and very filling, so feel free to have it whenever the craving strikes.

Ingredients

    For the sauce:
  • 1/2 cup plain yogurt
  • 1 Tbsp olive oil
  • Squeeze of lemon juice in a bowl
  • Fresh parsley, oregano, cumin, turmeric, salt, and pepper, to taste
  • For the pitas:
  • 1 lb chicken breast
  • 1 Tbsp olive oil, divided
  • 1 red onion
  • 2 bell peppers
  • Fresh parsley, oregano, cumin, turmeric, salt, and pepper, to taste
  • 2-4 whole wheat pita
  • Kalamata olives and lettuce as desired

Directions

  1. Combine the ingredients for the sauce in a bowl and set aside. Reserve a few tablespoons to use as a marinade.
