Award-winning Roasted Red Pepper Hummus

This is a ridiculously easy recipe that will fit right in to your new healthy lifestyle with out taking any thought aside from dumping some ingredients in a food processor.  I brought this to a Christmas party this year, and it was quite a hit (I didn’t tell anyone how little effort it took)- I even won “Best Appetizer” (out of 3 appetizers…)!  It makes a wonderful appetizer, but since it is full of protein, fiber, and nutrients, it works for lunch or snacks too!  It’s also very inexpensive, considering most of the ingredients are already in your pantry.

All it takes is:

  1. 28-oz can chickpeas, drained and rinsed it salt is a concern
  2. 3/4 cup roasted red peppers (I found some at the olive bar at Wegmans)
  3. 1-2 cloves garlic
  4. 1 T lemon juice
  5. 2 T olive oil
  6. Salt, pepper, and cumin to taste

Blend the first 3 ingredients in a food processor until mostly smooth, then drizzle in the lemon juice and olive oil.

Continue blending until very smooth, adding more olive oil if necessary to get a spreadable texture.

Serve with whole wheat pita and veggies for an incredibly healthy snack, or bake up some crostini slathered with garlicky olive oil for a fancy appetizer (that’s what I did, and I won an award and a $10 gift card, so I’d recommend that!).

Ingredients

Directions

  1. Blend first three ingredients into smooth paste, then drizzle in the lemon juice and olive oil.
  2. Season to taste.
  3. Serve with pita, crostini, vegetables, or anything else you'd like.
