What I’m Eating: Quick whole wheat penne with veggies

Yeah, you should be jealous.

My roommate and I just wanted something simple and healthy for dinner.  We were inspired by the pesto cupcakes in the freezer… until it morphed into the best dinner I’ve ever made.

What we planned:

Quick Whole Wheat Penne with Veggies

  • 4 oz whole wheat penne
  • 1/2 large head of broccoli, chopped small (including stems if tender)
  • 1 large or 2 small zucchini, diced
  • A few small tomatoes, diced
  • 3/4 c pesto
  1. Boil salted water and cook pasta according to package directions (actually, less- al dente never takes as long as they say).
  2. Meanwhile, heat a few teaspoons of oil in a large skillet over medium high heat and throw in the broccoli.  Let sear for a few minutes.
  3. Add the zucchini, stir the vegetables and spread them out into a single layer (multiple layers trap water and steams, rather than sears, the veggies.  That brown crust is irreplaceable).  Let sear for a minute or two, stir, and let sear for again.
  4. When the veggies begin to soften, toss in the tomatoes.  The nice thing about the wateriness of tomatoes is that the liquid they add does cause a little steaming, which prevents the veggies from burning caramelizing a little too far.
  5. Drain the pasta and toss it in with the veggies.  Add the pesto (melted, if it was in ice cube form) and toss.  Enjoy– unless…

The pan of pasta and veggies looked very naked. And inviting.  So we decided to add some fresh mozzarella shredded on top.  Then I had an idea… I popped it under the broiler for a few minutes and out came this wonderfulness:

Dinner went from a fairly delicious, but normal, pasta primavera, to what felt like baked ziti from a very fancy Italian restaurant. The drink in the back didn’t hurt either. Maybe I’ll have my roommate do a guest post on it!
