I have posted something like this before (the recipe that ended up on the ATK website), but I found a bunch of local ingredients at Wegman’s (if you live somewhere that doesn’t have Wegmans, I am truly sorry for you!) and made an even better version. This one only involves two ears of fresh corn, one medium super delicious tomato, salt, fresh cracked pepper, and a dribble of good olive oil. Oh, and some torn basil leaves! It’s a perfect lunch on a hot day.
- Two ears fresh corn, cut off the cob
- One medium tomato, diced
- Salt and fresh cracked pepper
- 1 tsp olive oil
- Sprinkling of torn fresh basil
- Combine all ingredients in a bowl. Eat happily.
