Quick Dinner- Leftovers edition

So, for this dinner, I had leftover steak from a date night and leftover peppers from an omelet.  Sounds good already, right?  Well, it gets better… add rice, and you have a 10 minute dinner.

First step: get a surprise call from your best friend as she strolls around her new neighborhood in Pittsburgh.

Second step:  if you haven’t already cooked the bell peppers, cut a few in to strips or squares.  Saute in a cast iron over high heat until slightly blackened.

Ignore the prosciutto… we ate it all at breakfast.

Third step:  Slice the steak into thin strips and season.  When the peppers are almost done, toss in the steak and turn as necessary to cook the steak through (about 2 minutes).

Fourth step:  While the rice finishes cooking, add a touch of soy sauce to the steak and peppers.

Fifth step:  Top rice with a touch more soy sauce and the steak/peppers.

Sixth step: Eat and enjoy the fact that dinner took less than 15 minutes to make!  This technique works well with any leftovers you may have.

Ingredients

  • 2 bell peppers
  • 1/2 lb steak, like skirt or flank steak
  • 2 cups brown rice
  • Soy sauce, salt, and pepper to taste

Directions
