Instant, Healthy Pumpkin Pie Smoothie

I don’t know why I haven’t thought of this before…

It’s like pumpkin pie, only in a cup. And frozen. And healthy.  How great is that?  It’s also a lot easier to make than pumpkin pie.  It only took me about 10 minutes from making up the recipe to cleaning the blender.  This is a loose recipe that you can easily alter depending on your tastes and what you have on hand:

  • 1/2 c (or more) canned pumpkin
  • 1/4 c skim milk
  • 1/4 c yogurt (I used plain, vanilla would probably be good)
  • 1/2 banana, peeled and frozen
  • 1 tsp honey
  • Any variety of pumpkin pie spices (cinnamon, ginger, nutmeg, allspice, cloves, etc.)
  • 5 ice cubes (if you like your smoothies to be more like milkshakes)

Blend all the ingredients until smooth, pour into a glass, and dust with more cinnamon!  That’s it!

Not only is it indulgent, it’s actually extremely healthy.  Besides the calcium and protein in the dairy and the potassium in the banana, pumpkin is a good source of Vitamin E, Pantothenic Acid, Magnesium, Phosphorus, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Iron and Manganese.  The pumpkin pie spices are also rich in antioxidants, so there’s an extra benefit there.  For under 200 calories, you get a filling breakfast, dessert, or snack that counts as a serving of vegetables and half a serving of fruit and dairy with as little added sugar as you want.  And it tastes like pie and ice cream all rolled into one.  Perfection.
