Perfect Weeknight Chili

I have to start this post with a disclaimer:  this recipe is not perfectly healthy.  Some chili recipes out there are, but not this one.  I adapted it from the Pioneer Woman, if that’s any indication of how not-healthy this recipe is.  It is, however, extremely delicious and makes enough for 6-8 servings, and the leftovers make for a fantastic lunch.  It also is definitely a wholesome part of a balanced diet, full of protein, iron, fiber, vitamin C, and antioxidants.  All in all, it’s calorie-dense, but it’s equally nutrient-dense– and totally delicious.

  • 1.5-2 lbs lean ground beef
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 15 oz can diced tomatoes
  • 28 oz can red kidney beans
  • ½ c masa harina (fine ground corn meal)
  • ½ bottle dark beer (optional)
  • Oregano, chili powder, cayenne, cumin, onion salt, salt, pepper
  • Shredded cheddar and crackers for serving
  1. Place ground beef, garlic, and a sprinkle of salt and pepper in a large Dutch oven over medium-high heat and cook until just barely browned. I added a dash of soy sauce for a little extra flavor.IMG_0435
  2. Pour in tomato sauce and tomatoes along with all the spices (to taste, but chili powder should be the primary addition) and simmer, partially covered to prevent messes, for up to an hour, or until the mixture has reduced about 1 inch.IMG_0436
  3. Mix the masa with ½ c water and whisk to mix. Stir into the chili to thicken and add a nice maize flavor.  This addition seems to “soak up” a lot of the flavor already added with the first addition of spices, so adjust the seasonings to taste (this much chili requires a lot of spices, so don’t be shy!)
  4. Add the beans and beer, if desired, and simmer for 10 more minutes.Weeknight Chili | foodsciencenerd.com
  5. Served topped with cheddar cheese and enjoy a hearty, warming, wholesome dinner.
