Green Tea Sherbet

On a whim, I decided it was a good day to make ice cream.  But, I didn’t have whipping cream or a million egg yolks to devote to making real ice cream, so I settled on sherbet.  I had the most of the ingredients for mango sherbet, but green tea sherbet sounded so much more delectable.  Also, I have boxes upon boxes of green tea bags that I will never use because I’m in a long-term relationship with David’s Tea, so it seemed like a perfect use.  It’s also stupidly easy compared to most ice creams.  And green tea is healthy, right?  Even when it’s doused in sugar?

Green Tea Sherbet (serves 6)

  • 2.5 c water
  • 1 c sugar
  • 1 c water
  • 12 tea bags
  • Squeeze lemon juice
  • 2 egg whites
  1. Boil 2.5 c water with 1 c sugar until sugar dissolves, then let simmer undisturbed for 10 minutes.  Allow to cool.IMG_1206
  2. Boil water for tea.  Pour 1 c water over 12 tea bags and steep for 10 minutes.  Remove tea bags, wring out, and squeeze in lemon juice.IMG_1207
  3. When both solutions are cool, combine and chill overnight.  If your ice cream maker needs to be frozen overnight, do that now too!IMG_1208
  4. Pour mixture in ice cream maker.  As it begins to freeze, fold in 2 egg whites, whipped to stiff peaks.  Continue churning and freeze to desired texture.

If you’re worried about the raw egg whites, go ahead and skip them.  The ice cream will be similar, but less fluffy and creamy.  This did swell up to way beyond a normal ice cream, so keep an eye on it!

I think I over-churned the ice cream because the overrun (definition: the amount of air whipped into an ice cream) was way… over run.  It almost feels like eating snow by the spoonful.  The flavor is quite nice, and I’d love to try this process with other teas, like oolong or Earl Grey.  I think the key is steeping a lot of tea in just one cup of water.
