Decadently Healthy Spinach Sauce

When I was making my pumpkin gnocchi last week, I realized that, although the gnocchi was technically half vegetable, that just wasn’t enough vegetable to meet my meal quota.  I didn’t feel like making anything to put on the side, so I decided to make a spinach sauce, as tomato sauce just didn’t seem right.  Looking in the freezer, I decided to defrost some spinach in a pan, but that was just lame.  I added (approximately):

  • 1/2 c skim milk
  • 1/4 c yogurt
  • 1/4 c mozz, shredded
  • 1/4 c romano
  • Salt and pepper

And stirred over heat until it made a sauce-like thing.

I ended up with this:

Ok, so it doesn’t look as delicious as it tastes…

Then I poured the spinach sauce over the gnocchi, and it was perfectly delicious!

Decadently Healthy Spinach Sauce


  • 10 oz frozen spinach, defrosted and drained
  • 1/2 cup skim milk
  • 1/4 cup yogurt
  • 1/4 cup mozzarella, shredded
  • 1/4 cup romano
  • Salt and pepper


  1. Combine all ingredients in a large sauce pan and stir until homogeneous and heated through.
  2. Season as desired and use as a topping or dip.
