Last night, I had a very strong craving for ice cream… with none in sight. I wasn’t going to go to the store (and I had neglected to work out all day), but I couldn’t get over the craving. So I took action instead and created a Chocolate Covered Strawberry Smoothie. I blended up some chia seeds (my new friends) in skim milk on a high setting in my fabulous new Vitamix until the seeds were undetectable. Why chia seeds? Well, they are very high in omega-3s, which I have only recently been consuming regularly in things like salmon. They also have a high dose of soluble fiber, which keeps you full longer, as well as a healthy dose of potassium, protein, calcium, and iron. I don’t add a ton like some people do in order to keep the texture smooth and prevent piling in undectected calories (they do have about 180 calories in 1/4 cup). Using milk as a base increased the protein and calcium content as well as being reminiscent of the ice cream I so badly wanted.
Next, I found some strawberries in the freezer and threw those in. That wasn’t quite desserty enough for me, so I also added a bit of cocoa powder and a splash of decaf iced coffee along with 3 ice cubes to make the mixture thick and icy like, well, ice cream.
It was a little bitter from the cocoa, so I added a drizzle of maple syrup… BUT I really think topping this with whipped cream or eating as a smoothie bowl with more fruit, granola, or a drizzle of chocolate syrup would have been perfect. Unfortunately, I had none of those things, so I stuck with a regular smoothie format. It was a perfect craving-quencher that left me feeling satisfied and not-at-all guilty.
- 1/2 cup skim milk
- 2 tsp chia seeds
- 1 cup frozen strawberries
- 2 Tbsp cocoa powder
- 1 Tbsp decaf iced coffee (optional)
- 1 tsp maple syrup (optional)
- 3 ice cubes
- Blend the milk and chia seeds on high until homogenized.
- Add the rest of the ingredients and blend until smooth, starting low and increasingly slowly.
- Top with whipped cream, chocolate sauce, fruit, nuts, etc. as desired.
