A while back, I posted about chocolate-covered soft serve popsicles. Well, when you make these popsicles, you will have a lot of extra magic-shell topping to use on whatever you can find. You could always go with the traditional strawberries or ice cream, but there are only so many times you can do that before wanting to do something else. I wanted to make something that I could eat without feeling guilty, as well, so I knew fruit was the answer. But which fruit?
In order to get the full effect of the magic shell, it’s best to be able to freeze the fruit without it being to hard to bite through. I was inspired in the frozen section of the grocery store when I saw a container of bon-bons to use bananas! They are cheap, easy to work with, and don’t get crunchy when frozen.
This recipe is just that simple- chocolate-covered bananas. Just slice up a few bananas (ones with a little green are easier to work with) into thick bite-sized pieces, pierce with a fork or toothpick to keep your hands clean, and dip completely in melted magic shell coating. Put on a piece of parchement paper and freeze until the coating is solidified, then enjoy guiltlessly!
- 1 bag dark chocolate chips
- 1/4 cup coconut oil
- 4-5 underripe bananas
- Combine the chocolate chips and the coconut oil in a microwave safe container. Microwave for 30 seconds at a time, stirring in between, until smooth.
- Slice the bananas into 3/4-1" thick rounds. Dip in the chocolate completely and lay flat on a parchment-lined plate or cookie sheet.
- Freeze until the shell is hardened, then transfer to a plastic bag and continue to freeze until banana is frozen, about 2 hours.
