A delicious twist on a hated Christmas side dish- Brussels sprouts!

Every family has one of those side dishes that all but one person hates.  For many kids, it’s Brussels sprouts.  And I don’t blame them!  Mushy sulfurous green balls are not my idea of delicious!  However, if you make Brussels sprouts kid-friendly and delicious, they’re like little green jewels packed with nutrition such as vitamin C, niacin, pantothenic acid, vitamin K, calcium, potassium, iron, and fiber.  This recipe is particularly simple because it just requires frozen veggies!

Brussels Sprouts “Gratin” 

Ingredients:

  • Garlic, olive oil, salt
  • Whole wheat breadcrumbs
  • Grated Romano
  • Shredded Parmesan
  • Frozen Brussels sprouts, microwaved until bright green and thawed but not cooked through

Method:

  1. Mince and saute the garlic in a saute pan big enough to hold all the sprouts (one that can go under the broiler is best!)
  2. Cut the sprouts into bite-sized pieces and toss with the garlic
  3. Add some parm, romano, salt, and breadcrumbs, toss until melted
  4. Top the veggies with more cheese and breadcrumbs and broil until the cheese is browned.
  5. Feed to happy children.

Ingredients

  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup whole wheat breadcrumbs
  • 1/2 cup grated Romano
  • 1/4 cup shredded Parmesan
  • 16 oz bag frozen Brussels sprouts, microwaved until bright green and thawed but not cooked through

Directions

  1. Mince and saute the garlic in an oven-safe saute pan big enough to hold all the Brussels sprouts.
  2. Cut the Brussels sprouts into bite-sized pieces and toss with the garlic.
  3. Add some parm, romano, salt, and breadcrumbs, toss until melted.
  4. Top the veggies with more cheese and breadcrumbs and broil until the cheese is browned.
